Mersin-style sautéed beef with tomato, peppers, and cumin rolled into a thin tortilla-like bread.

Ingredients

  • 1 kg beef sirloin
  • 1 cup yufka pastry
  • 1 tbsp sliced scallions
  • 2 tsp ground sumac
  • 1/4 cup unsalted butter
  • a generous handful of ripe tomatoes
  • a handful of fresh mint, chopped
  • a drizzle of butter-fried pita
  • 500ml water
  • a pinch of Aleppo pepper
  • 2 baby potatoes, chopped
