EasyThick white bread toasted and spread with homemade pandan coconut egg jam, a Thai café morning favourite.
Ingredients
- 600g beef sirloin
- 300g roti dough
- a handful of sliced lemongrass
- 2 tsp white pepper
- 3 tbsp neutral vegetable oil
- 1 cup bean sprouts, sliced
- a handful of fresh mint, chopped
- a drizzle of crispy fried shallots

Gather and prep the glutinous rice and large prawns, measuring everything out so it is ready to go.

Heat coconut oil in a non-stick pan over medium heat until warm but not smoking.

Add the sliced lemongrass and Thai eggplant, cooking gently until softened, about 3-4 minutes.

Stir in the large prawns, season with dried shrimp, and cook until just done, about 5 mins.

Warm the glutinous rice alongside, turning once, until heated through and lightly toasted.

Plate the glutinous rice and spoon the cooked mixture over the top.
Tips
•Keep the heat moderate so the large prawns cooks through gently without drying out or turning rubbery.
•A squeeze of citrus or a sprinkle of mint just before serving brightens up the whole plate.
