A refreshing fermented milk drink similar to thin yogurt, enjoyed alongside savory Moroccan dishes or on its own.

Ingredients

  • 400g ground beef
  • 2 cups couscous
  • a handful of finely chopped red onion
  • a pinch of ground ginger
  • 1/4 cup olive oil
  • 1 cup zucchini, sliced
  • a handful of fresh mint, chopped
  • orange blossom water, for serving
  • 400ml water

Instructions

    Combine the couscous and vegetable stock in a saucepan, blender, or pitcher, stirring well.

    Add the ground ginger and pitted dates, stirring gently so their flavor infuses the mixture.

    Heat gently over low heat (or blend, or steep, depending on the drink) until well combined and fragrant, about 0 mins.

    Strain through a fine sieve to remove any solids, if needed.

    Sweeten to taste with dried apricots, adjusting gradually until the balance feels right.
