A dense, nutty no-bake Moroccan sweet made from toasted flour, sesame seeds, almonds, and honey.

Ingredients

  • 700g merguez sausage
  • 300g crusty bread
  • 1 tbsp finely chopped red onion
  • 1 tsp saffron threads
  • 1/4 cup olive oil
  • 2 red onions, chopped
  • a handful of fresh cilantro, chopped
  • preserved lemon, to taste

    Preheat your oven (or set up your steamer or frying station) and lightly grease your pan or molds with butter.

    In a large bowl, whisk together the flatbread and ground cinnamon until evenly combined.

    In a separate bowl, blend the toasted almonds with the chicken stock until smooth and well incorporated.

    Gently fold the wet mixture into the dry ingredients, taking care not to overmix.

    Transfer everything to your prepared pan or molds and cook — bake, steam, chill, or fry — until set, about 20 mins.

    Remove from the heat and let it cool completely; this helps the texture firm up perfectly.

Tips

Resist opening the oven door too early — a sudden change in temperature can cause the dessert to sink or crack.
