EasyCrumbly almond or sesame shortbread cookies with a cracked sugar crust that melt in the mouth.
Ingredients
- 600g ground beef
- 300g couscous
- 2 tsp finely chopped red onion
- 1 tsp harissa paste
- 2 tbsp olive oil
- 2 potatoes, chopped
- a handful of fresh parsley, chopped
- a generous spoonful of orange blossom water
- 400ml water
- 2 tsp ras el hanout

Preheat your oven (or set up your steamer or frying station) and lightly grease your pan or molds with butter.

In a large bowl, whisk together the crusty bread and saffron threads until evenly combined.

In a separate bowl, blend the honey with the chicken stock until smooth and well incorporated.

Gently fold the wet mixture into the dry ingredients, taking care not to overmix.

Transfer everything to your prepared pan or molds and cook — bake, steam, chill, or fry — until set, about 15 mins.

Remove from the heat and let it cool completely; this helps the texture firm up perfectly.
