Ingredients
- 1 kg white fish fillets
- 1 cup vermicelli noodles
- 2 tbsp minced garlic
- 1/2 tsp ground cinnamon
- 1/4 cup olive oil
- 2 red onions, chopped
- a handful of fresh cilantro, chopped
- a drizzle of dried apricots
- 2 cups vegetable stock
- 2 tsp ground turmeric
- 200g butternut squash

Gather and prep the flatbread and white fish fillets, measuring everything out so it is ready to go.

Heat butter in a non-stick pan over medium heat until warm but not smoking.

Add the sliced shallots and butternut squash, cooking gently until softened, about 3-4 minutes.

Stir in the white fish fillets, season with ground cinnamon, and cook until just done, about 30 mins.

Warm the flatbread alongside, turning once, until heated through and lightly toasted.

Plate the flatbread and spoon the cooked mixture over the top.
