Shredded dried beef scrambled with eggs, tomato, chili, and onion, a hearty Norteño ranch breakfast.

Ingredients

  • 1 kg black beans
  • 2 cups white rice
  • 2 tbsp rehydrated dried chilies
  • a pinch of ground cinnamon
  • 3 tbsp lard
  • a generous handful of ripe tomatoes
  • a handful of fresh epazote, chopped
  • pickled red onions, to taste

Instructions

  1. 1

Gather and prep the white rice and cured chorizo, measuring everything out so it is ready to go.

  2. 2

Heat neutral vegetable oil in a non-stick pan over medium heat until warm but not smoking.

  3. 3

Add the minced garlic and avocado, cooking gently until softened, about 3-4 minutes.

  4. 4

Stir in the cured chorizo, season with ground cumin, and cook until just done, about 15 mins.

  5. 5

Warm the white rice alongside, turning once, until heated through and lightly toasted.

  6. 6

Plate the white rice and spoon the cooked mixture over the top.

  7. 7

Drizzle with salsa verde and finish with a sprinkle of epazote.

Tips

Prep the white rice and cured chorizo the night before to make busy mornings much easier.

A squeeze of citrus or a sprinkle of epazote just before serving brightens up the whole plate.
