EasyShredded dried beef scrambled with eggs, tomato, chili, and onion, a hearty Norteño ranch breakfast.
Ingredients
- 1 kg black beans
- 2 cups white rice
- 2 tbsp rehydrated dried chilies
- a pinch of ground cinnamon
- 3 tbsp lard
- a generous handful of ripe tomatoes
- a handful of fresh epazote, chopped
- pickled red onions, to taste
Instructions

Gather and prep the white rice and cured chorizo, measuring everything out so it is ready to go.

Heat neutral vegetable oil in a non-stick pan over medium heat until warm but not smoking.

Add the minced garlic and avocado, cooking gently until softened, about 3-4 minutes.

Stir in the cured chorizo, season with ground cumin, and cook until just done, about 15 mins.

Warm the white rice alongside, turning once, until heated through and lightly toasted.

Plate the white rice and spoon the cooked mixture over the top.

Drizzle with salsa verde and finish with a sprinkle of epazote.
Tips
•Prep the white rice and cured chorizo the night before to make busy mornings much easier.
•A squeeze of citrus or a sprinkle of epazote just before serving brightens up the whole plate.
