Ingredients

  • 700g fresh salmon fillets
  • 2 cups soba noodles
  • 2 tbsp minced garlic
  • 1/2 tsp wasabi paste
  • 2 tbsp neutral vegetable oil
  • 1 cup daikon radish, sliced
  • a handful of fresh shiso leaves, chopped
  • bonito flakes, for serving
  • 400ml water
  • 1 tsp white sesame seeds

    Preheat your oven (or set up your steamer or frying station) and lightly grease your pan or molds with neutral vegetable oil.

    In a large bowl, whisk together the ramen noodles and cracked black pepper until evenly combined.

    In a separate bowl, blend the bonito flakes with the chicken stock until smooth and well incorporated.

    Gently fold the wet mixture into the dry ingredients, taking care not to overmix.

    Transfer everything to your prepared pan or molds and cook — bake, steam, chill, or fry — until set, about 20 mins.
