Difficulty
EasyA firm, elegant jelly of sweet red bean paste and agar set into blocks and sliced into refined portions.
Ingredients
- 700g fresh salmon fillets
- 2 cups soba noodles
- 2 tbsp minced garlic
- 1/2 tsp wasabi paste
- 2 tbsp neutral vegetable oil
- 1 cup daikon radish, sliced
- a handful of fresh shiso leaves, chopped
- bonito flakes, for serving
- 400ml water
- 1 tsp white sesame seeds
Instructions
- 1
Preheat your oven (or set up your steamer or frying station) and lightly grease your pan or molds with neutral vegetable oil.
- 2
In a large bowl, whisk together the ramen noodles and cracked black pepper until evenly combined.
- 3
In a separate bowl, blend the bonito flakes with the chicken stock until smooth and well incorporated.
- 4
Gently fold the wet mixture into the dry ingredients, taking care not to overmix.
- 5
Transfer everything to your prepared pan or molds and cook — bake, steam, chill, or fry — until set, about 20 mins.
- 6
Remove from the heat and let it cool completely; this helps the texture firm up perfectly.
- 7
Garnish with shiso leaves or a dusting of toasted sesame oil.
Tips
•For the cleanest slices, chill the finished dessert thoroughly before cutting.
•This keeps well for a couple of days in an airtight container, and the flavor often improves overnight.
