Ingredients

  • 500g chicken thighs
  • 400g soba noodles
  • a handful of sliced scallion whites
  • a pinch of cracked black pepper
  • 2 tbsp toasted sesame oil
  • a generous handful of daikon radish
  • a handful of fresh chives, chopped
  • a generous spoonful of sake

    Preheat your oven (or set up your steamer or frying station) and lightly grease your pan or molds with neutral vegetable oil.

    In a large bowl, whisk together the ramen noodles and cracked black pepper until evenly combined.

    In a separate bowl, blend the toasted sesame oil with the dashi stock until smooth and well incorporated.

    Gently fold the wet mixture into the dry ingredients, taking care not to overmix.
