Difficulty
EasyTwo fluffy honey pancakes sandwiched together with a generous filling of sweet azuki red bean paste.
Ingredients
- 400g sushi-grade tuna
- 1 cup nori sheets
- a handful of grated fresh ginger
- 2 tsp wasabi paste
- 2 tbsp toasted sesame oil
- 1 cup napa cabbage, sliced
- a handful of fresh chives, chopped
- a drizzle of mirin
- 2 cups water
- 1 1/2 tsp shichimi togarashi
- 200g shiitake mushrooms
Instructions
- 1
Preheat your oven (or set up your steamer or frying station) and lightly grease your pan or molds with neutral vegetable oil.
- 2
In a large bowl, whisk together the ramen noodles and cracked black pepper until evenly combined.
- 3
In a separate bowl, blend the soy sauce with the water until smooth and well incorporated.
- 4
Gently fold the wet mixture into the dry ingredients, taking care not to overmix.
- 5
Transfer everything to your prepared pan or molds and cook — bake, steam, chill, or fry — until set, about 20 mins.
- 6
Remove from the heat and let it cool completely; this helps the texture firm up perfectly.
- 7
Garnish with chives or a dusting of sake.
Tips
•This keeps well for a couple of days in an airtight container, and the flavor often improves overnight.
•For the cleanest slices, chill the finished dessert thoroughly before cutting.
