Two fluffy honey pancakes sandwiched together with a generous filling of sweet azuki red bean paste.

Ingredients

  • 400g sushi-grade tuna
  • 1 cup nori sheets
  • a handful of grated fresh ginger
  • 2 tsp wasabi paste
  • 2 tbsp toasted sesame oil
  • 1 cup napa cabbage, sliced
  • a handful of fresh chives, chopped
  • a drizzle of mirin
  • 2 cups water
  • 1 1/2 tsp shichimi togarashi
  • 200g shiitake mushrooms

    Preheat your oven (or set up your steamer or frying station) and lightly grease your pan or molds with neutral vegetable oil.

    In a large bowl, whisk together the ramen noodles and cracked black pepper until evenly combined.

    In a separate bowl, blend the soy sauce with the water until smooth and well incorporated.

    Gently fold the wet mixture into the dry ingredients, taking care not to overmix.

    Transfer everything to your prepared pan or molds and cook — bake, steam, chill, or fry — until set, about 20 mins.

    Remove from the heat and let it cool completely; this helps the texture firm up perfectly.

Tips
