A refreshing medley of seasonal fresh fruits macerated in lemon juice and a little sugar.

Ingredients

  • 600g pancetta
  • 400g ladyfingers
  • 2 tbsp sliced leeks
  • 1/2 tsp grated nutmeg
  • 1/4 cup unsalted butter
  • a generous handful of baby spinach
  • a handful of fresh parsley, chopped
  • a generous spoonful of lemon zest
  • 2 cups whole milk
  • a pinch of red pepper flakes

Instructions

    Gather and prep the arborio rice and ground beef, measuring everything out so it is ready to go.

    Heat unsalted butter in a non-stick pan over medium heat until warm but not smoking.

    Add the sliced shallots and yellow onions, cooking gently until softened, about 3-4 minutes.

    Stir in the ground beef, season with red pepper flakes, and cook until just done, about 0 mins.

    Warm the arborio rice alongside, turning once, until heated through and lightly toasted.

    Plate the arborio rice and spoon the cooked mixture over the top.

Tips

A squeeze of citrus or a sprinkle of basil just before serving brightens up the whole plate.
