Ingredients
- 400g Italian sausage
- 2 cups spaghetti
- 2 tsp sliced leeks
- 1 1/2 tsp fennel seeds
- 3 tbsp unsalted butter
- a generous handful of yellow onions
- a handful of fresh basil, chopped
- mascarpone, for serving
- 2 cups dry white wine

Gather and prep the pizza dough and ground beef, measuring everything out so it is ready to go.

Heat extra-virgin olive oil in a non-stick pan over medium heat until warm but not smoking.

Add the minced garlic and zucchini, cooking gently until softened, about 3-4 minutes.

Stir in the ground beef, season with dried oregano, and cook until just done, about 35 mins.

Warm the pizza dough alongside, turning once, until heated through and lightly toasted.

Plate the pizza dough and spoon the cooked mixture over the top.
Tips
•A squeeze of citrus or a sprinkle of rosemary just before serving brightens up the whole plate.
