EasyIce-cold sweet black tea poured over a tall glass of ice—Indonesia's most ordered drink at any warung.
Ingredients
- 500g large prawns
- 300g rice noodles
- 2 tsp sliced lemongrass
- 1 tsp palm sugar
- 1/4 cup coconut oil
- 1 cup chayote, sliced
- a handful of fresh cilantro, chopped
- roasted peanuts, to taste
- 400ml chicken stock

Combine the fried shallot crackers (krupuk) and coconut milk in a saucepan, blender, or pitcher, stirring well.

Add the crushed candlenuts and lime wedges, stirring gently so their flavor infuses the mixture.

Heat gently over low heat (or blend, or steep, depending on the drink) until well combined and fragrant, about 5 mins.

Strain through a fine sieve to remove any solids, if needed.

Sweeten to taste with coconut cream, adjusting gradually until the balance feels right.

Chill in the refrigerator, or pour straight over ice, depending on whether it is served cold or hot.
Tips
•Adjust the sweetness gradually, tasting as you go — you can always add more coconut cream, but you cannot take it away.
•If serving warm, gently reheat just before pouring rather than letting it come to a boil.
