Woven palm-leaf rice dumplings served with opor ayam coconut curry, a traditional Lebaran morning feast.

Ingredients

  • 600g tempeh
  • 2 cups rice noodles
  • 1 tbsp grated fresh ginger
  • a pinch of ground cumin
  • 1/4 cup coconut oil
  • 2 bean sprouts, chopped
  • a handful of fresh Thai basil, chopped
  • roasted peanuts, for serving

    Gather and prep the rice noodles and chicken thighs, measuring everything out so it is ready to go.

    Heat neutral vegetable oil in a non-stick pan over medium heat until warm but not smoking.

    Add the grated fresh ginger and long beans, cooking gently until softened, about 3-4 minutes.

    Stir in the chicken thighs, season with tamarind paste, and cook until just done, about 1 hr.

    Warm the rice noodles alongside, turning once, until heated through and lightly toasted.

    Plate the rice noodles and spoon the cooked mixture over the top.

    Drizzle with roasted peanuts and finish with a sprinkle of cilantro.

Tips

Make a double batch — leftovers reheat beautifully for a quick weekday breakfast.
