Round gram flour sweets roasted in ghee with sugar and cardamom, rolled into golden balls for festive occasions.

Ingredients

  • 1 kg lamb shoulder
  • 2 cups roti
  • 2 tsp curry leaves
  • a pinch of ground turmeric
  • 2 tbsp ghee
  • 1 cup fresh spinach, sliced
  • a handful of fresh mint, chopped
  • lemon wedges, for serving

Instructions

    Preheat your oven (or set up your steamer or frying station) and lightly grease your pan or molds with ghee.

    In a large bowl, whisk together the naan bread and garam masala until evenly combined.

    In a separate bowl, blend the plain yogurt with the water until smooth and well incorporated.

    Gently fold the wet mixture into the dry ingredients, taking care not to overmix.

    Transfer everything to your prepared pan or molds and cook — bake, steam, chill, or fry — until set, about 25 mins.

    Remove from the heat and let it cool completely; this helps the texture firm up perfectly.

Tips
