A fudge-like milk-solid sweet flavored with pistachio, coconut, or chocolate and cut into neat diamond shapes.

Ingredients

  • 1 kg large prawns
  • 2 cups flattened rice (poha)
  • 2 tbsp minced garlic
  • 2 tsp red chili powder
  • 1/4 cup ghee
  • a generous handful of green chilies
  • a handful of fresh cilantro, chopped
  • a generous spoonful of heavy cream
  • 400ml water
  • a pinch of garam masala

    Preheat your oven (or set up your steamer or frying station) and lightly grease your pan or molds with ghee.

    In a large bowl, whisk together the roti and mustard seeds until evenly combined.

    In a separate bowl, blend the plain yogurt with the water until smooth and well incorporated.

    Gently fold the wet mixture into the dry ingredients, taking care not to overmix.

    Transfer everything to your prepared pan or molds and cook — bake, steam, chill, or fry — until set, about 25 mins.

    Remove from the heat and let it cool completely; this helps the texture firm up perfectly.

Tips

Bring your plain yogurt to room temperature before mixing for a smoother, more even texture.

For the cleanest slices, chill the finished dessert thoroughly before cutting.
