The iconic French sparkling orange drink with real pulp, traditionally shaken before serving to wake the citrus sediment.

Ingredients

  • 700g beef chuck
  • 400g puff pastry
  • 1 tbsp sliced leeks
  • 1 1/2 tsp fresh thyme
  • 1/4 cup unsalted butter
  • 200g celery stalks
  • a handful of fresh parsley, chopped
  • Gruyère cheese, for serving
  • 400ml chicken stock
  • 2 tsp grated nutmeg
  • 1 cup pearl onions, sliced

Instructions

    Combine the brioche and beef stock in a saucepan, blender, or pitcher, stirring well.

    Add the grated nutmeg and Gruyère cheese, stirring gently so their flavor infuses the mixture.

    Heat gently over low heat (or blend, or steep, depending on the drink) until well combined and fragrant, about 0 mins.

    Strain through a fine sieve to remove any solids, if needed.

    Sweeten to taste with unsalted butter, adjusting gradually until the balance feels right.

    Chill in the refrigerator, or pour straight over ice, depending on whether it is served cold or hot.

    Garnish with chervil just before serving.

Tips

Serve in a chilled glass for the most refreshing result on a hot day.
