The iconic Mexican cocktail of blanco tequila, triple sec, and fresh lime shaken and served in a salt-rimmed glass.

Ingredients

  • 700g black beans
  • 2 cups masa dough
  • 2 tsp finely chopped white onion
  • 1 1/2 tsp ground cinnamon
  • 1/4 cup lard
  • 2 red bell peppers, chopped
  • a handful of fresh epazote, chopped
  • a generous spoonful of lime wedges
  • 2 cups beef stock

Instructions

    Combine the white rice and beef stock in a saucepan, blender, or pitcher, stirring well.

    Add the smoked paprika and crumbled cotija cheese, stirring gently so their flavor infuses the mixture.

    Heat gently over low heat (or blend, or steep, depending on the drink) until well combined and fragrant, about 0 mins.

    Strain through a fine sieve to remove any solids, if needed.

    Sweeten to taste with Mexican crema, adjusting gradually until the balance feels right.

Adjust the sweetness gradually, tasting as you go — you can always add more Mexican crema, but you cannot take it away.
