Creamy, rich whole milk from Hokkaido dairy farms, revered across Japan for its exceptional sweetness and body.

Ingredients

  • 1 kg firm tofu
  • 2 cups ramen noodles
  • 2 tsp sliced scallion whites
  • a pinch of shichimi togarashi
  • 1/4 cup toasted sesame oil
  • 200g bean sprouts
  • a handful of fresh chives, chopped
  • a drizzle of bonito flakes
  • 1 cup chicken stock
  • 1 tsp white sesame seeds

Instructions

    Combine the ramen noodles and dashi stock in a saucepan, blender, or pitcher, stirring well.

    Add the shichimi togarashi and sake, stirring gently so their flavor infuses the mixture.

    Heat gently over low heat (or blend, or steep, depending on the drink) until well combined and fragrant, about 0 mins.

    Strain through a fine sieve to remove any solids, if needed.
