The classic ichiju-sansai breakfast of steamed rice, miso soup, grilled fish, pickles, and simmered vegetables.

Ingredients

  • 400g thinly sliced beef
  • 300g soba noodles
  • a handful of sliced scallion whites
  • 1 1/2 tsp wasabi paste
  • 2 tbsp neutral vegetable oil
  • a generous handful of napa cabbage
  • a handful of fresh mitsuba, chopped
  • bonito flakes, for serving
  • 500ml water

    Gather and prep the nori sheets and sushi-grade tuna, measuring everything out so it is ready to go.

    Heat neutral vegetable oil in a non-stick pan over medium heat until warm but not smoking.

    Add the minced garlic and shiitake mushrooms, cooking gently until softened, about 3-4 minutes.

    Stir in the sushi-grade tuna, season with cracked black pepper, and cook until just done, about 20 mins.

    Warm the nori sheets alongside, turning once, until heated through and lightly toasted.

    Plate the nori sheets and spoon the cooked mixture over the top.

    Drizzle with mirin and finish with a sprinkle of chives.

Tips

Keep the heat moderate so the sushi-grade tuna cooks through gently without drying out or turning rubbery.

A squeeze of citrus or a sprinkle of chives just before serving brightens up the whole plate.
