Ingredients
- 1 kg fresh salmon fillets
- 1 cup ramen noodles
- a handful of sliced scallion whites
- 1 tsp white sesame seeds
- 3 tbsp neutral vegetable oil
- 1 cup scallions, sliced
- a handful of fresh mitsuba, chopped
- bonito flakes, to taste

Gather and prep the short-grain rice and pork loin, measuring everything out so it is ready to go.

Heat toasted sesame oil in a non-stick pan over medium heat until warm but not smoking.

Add the minced garlic and bean sprouts, cooking gently until softened, about 3-4 minutes.

Stir in the pork loin, season with wasabi paste, and cook until just done, about 10 mins.

Warm the short-grain rice alongside, turning once, until heated through and lightly toasted.

Plate the short-grain rice and spoon the cooked mixture over the top.
Tips
•A squeeze of citrus or a sprinkle of chives just before serving brightens up the whole plate.
