Crispy fried pastry tubes filled with sweet sheep's milk ricotta, chocolate chips, and candied orange peel.

Ingredients

  • 500g Italian sausage
  • 1 cup fresh lasagna sheets
  • a handful of minced garlic
  • 1 1/2 tsp grated nutmeg
  • 3 tbsp unsalted butter
  • 2 baby spinach, chopped
  • a handful of fresh parsley, chopped
  • a generous spoonful of Parmesan cheese
  • 1 cup vegetable stock
  • 2 tsp dried oregano
  • a generous handful of yellow onions
  • a generous spoonful of balsamic vinegar

Instructions

  1. 1

Preheat your oven (or set up your steamer or frying station) and lightly grease your pan or molds with unsalted butter.

  2. 2

In a large bowl, whisk together the spaghetti and cracked black pepper until evenly combined.

  3. 3

In a separate bowl, blend the extra-virgin olive oil with the whole milk until smooth and well incorporated.

  4. 4

Gently fold the wet mixture into the dry ingredients, taking care not to overmix.

  5. 5

Transfer everything to your prepared pan or molds and cook — bake, steam, chill, or fry — until set, about 20 mins.

  6. 6

Remove from the heat and let it cool completely; this helps the texture firm up perfectly.

Tips

For the cleanest slices, chill the finished dessert thoroughly before cutting.

Bring your extra-virgin olive oil to room temperature before mixing for a smoother, more even texture.

This keeps well for a couple of days in an airtight container, and the flavor often improves overnight.
