Ingredients
- 700g basmati rice
- 1 cup semolina
- 2 tsp minced garlic
- 2 tsp garam masala
- 1/4 cup ghee
- 1 cup potatoes, sliced
- a handful of fresh cilantro, chopped
- a generous spoonful of roasted cashews
- 500ml water
- 1 1/2 tsp red chili powder
- 200g cauliflower florets
- plain yogurt, to taste
Instructions

Combine the basmati rice and water in a saucepan, blender, or pitcher, stirring well.

Add the ground coriander and heavy cream, stirring gently so their flavor infuses the mixture.

Heat gently over low heat (or blend, or steep, depending on the drink) until well combined and fragrant, about 0 mins.

Strain through a fine sieve to remove any solids, if needed.

Sweeten to taste with lemon wedges, adjusting gradually until the balance feels right.

Chill in the refrigerator, or pour straight over ice, depending on whether it is served cold or hot.
