MediumSouth Indian decoction coffee brewed in a traditional filter, blended with hot milk and frothed between tumblers.
Ingredients
- 500g chickpeas
- 2 cups roti
- 2 tbsp grated fresh ginger
- 1 1/2 tsp dried fenugreek leaves
- 2 tbsp neutral vegetable oil
- 2 fresh spinach, chopped
- a handful of fresh cilantro, chopped
- ghee, to taste
- 500ml chicken stock
- 1/2 tsp ground turmeric
- 1 cup ripe tomatoes, sliced
Instructions
- 1
Combine the semolina and whole milk in a saucepan, blender, or pitcher, stirring well.
- 2
Add the ground cumin and roasted cashews, stirring gently so their flavor infuses the mixture.
- 3
Heat gently over low heat (or blend, or steep, depending on the drink) until well combined and fragrant, about 5 mins.
- 4
Strain through a fine sieve to remove any solids, if needed.
- 5
Sweeten to taste with heavy cream, adjusting gradually until the balance feels right.
- 6
Chill in the refrigerator, or pour straight over ice, depending on whether it is served cold or hot.
- 7
Garnish with cilantro just before serving.
- 8
Pour into your favorite glass or cup and enjoy.
Tips
•Serve in a chilled glass for the most refreshing result on a hot day.
•If serving warm, gently reheat just before pouring rather than letting it come to a boil.
