EasyGreen tea scented with fresh jasmine blossoms layer by layer until the leaves absorb a delicate floral fragrance.
Ingredients
- 400g pork belly
- 2 cups glutinous rice
- 2 tbsp sliced scallion whites
- 1 tsp chili oil
- 1/4 cup neutral vegetable oil
- 1 cup scallions, sliced
- a handful of fresh cilantro, chopped
- a drizzle of soy sauce
- 400ml pork stock
- 1 1/2 tsp white pepper
Instructions
- 1
Combine the steamed buns and water in a saucepan, blender, or pitcher, stirring well.
- 2
Add the star anise and black vinegar, stirring gently so their flavor infuses the mixture.
- 3
Heat gently over low heat (or blend, or steep, depending on the drink) until well combined and fragrant, about 0 mins.
- 4
Strain through a fine sieve to remove any solids, if needed.
- 5
Sweeten to taste with Shaoxing wine, adjusting gradually until the balance feels right.
- 6
Chill in the refrigerator, or pour straight over ice, depending on whether it is served cold or hot.
Tips
•If serving warm, gently reheat just before pouring rather than letting it come to a boil.
•Adjust the sweetness gradually, tasting as you go — you can always add more Shaoxing wine, but you cannot take it away.
