- 1 kg whole duck
- 400g glutinous rice
- 2 tbsp minced garlic
- 1 1/2 tsp star anise
- 3 tbsp toasted sesame oil
- 2 bean sprouts, chopped
- a handful of fresh cilantro, chopped
- a generous spoonful of soy sauce
- 500ml water
- 1/2 tsp doubanjiang (chili bean paste)

Preheat your oven (or set up your steamer or frying station) and lightly grease your pan or molds with toasted sesame oil.

In a large bowl, whisk together the egg noodles and chili oil until evenly combined.

In a separate bowl, blend the toasted sesame seeds with the pork stock until smooth and well incorporated.

Gently fold the wet mixture into the dry ingredients, taking care not to overmix.

Transfer everything to your prepared pan or molds and cook — bake, steam, chill, or fry — until set, about 10 mins.

Remove from the heat and let it cool completely; this helps the texture firm up perfectly.
