Cloud-soft mantou steamed buns eaten plain with condensed milk or alongside a warm bowl of soy milk.

Ingredients

  • 600g large prawns
  • 300g steamed buns
  • 2 tsp sliced scallion whites
  • 1 tsp chili oil
  • 3 tbsp neutral vegetable oil
  • a generous handful of shiitake mushrooms
  • a handful of fresh cilantro, chopped
  • black vinegar, for serving

Instructions

  1. 1

Gather and prep the steamed buns and ground pork, measuring everything out so it is ready to go.

  2. 2

Heat toasted sesame oil in a non-stick pan over medium heat until warm but not smoking.

  3. 3

Add the sliced scallion whites and scallions, cooking gently until softened, about 3-4 minutes.

  4. 4

Stir in the ground pork, season with white pepper, and cook until just done, about 15 mins.

  5. 5

Warm the steamed buns alongside, turning once, until heated through and lightly toasted.

  6. 6

Plate the steamed buns and spoon the cooked mixture over the top.

Tips

Prep the steamed buns and ground pork the night before to make busy mornings much easier.

Make a double batch — leftovers reheat beautifully for a quick weekday breakfast.

A squeeze of citrus or a sprinkle of cilantro just before serving brightens up the whole plate.
